The Basque Table, Mary Alustiza

*        Not only is this a wonderful cookbook, but it is a treasure trove of Basque history, customs and lore. Everything is covered…from who the Basques are and their wonderful cooking, to the link between the Basque country (part of Spain, part of France) and the American west. Many Basques were attracted to the hotel-restaurant business. The hotels became home away from home to the many newly immigrated men and families.

*        The second part of this cookbook contains the “Treasured Recipes of the Alustiza Family”. The family built a very famous hotel in Stockton, California. and a restaurant that became one of the leading “old-time” restaurants in the area.

*        You will find everything from tapas to dessert. The soup section is not to be missed, as soup is a staple of the Basque table at every lunch and dinner.
